My life can sometimes feel too hectic for cooking, but I really value eating healthy. That’s why I love these easy salmon and black bean cakes for dinner.  For reference, I started with this recipe but ended up creating my own variation!

Salmon is full of healthy omega-3 fatty acids which are excellent for brain health. This recipe calls for canned salmon, which is affordable as well as healthy. It’s much cheaper than fresh salmon. I suggest purchasing wild Alaskan salmon for a higher-quality fish compared to farm-raised salmon. I buy my canned salmon from Trader Joe’s, which has canned wild salmon at an affordable price point.

I used oats for the cakes but bread crumbs may absorb liquid better, so I recommend experimenting with both.

SALMON AND BLACK BEAN CAKES RECIPE

Makes approximately 8 medium-sized cakes

 

Ingredients

  • 2  cans (7.5 oz) of salmon, drained
  • 1 can of black beans, drained
  • 2 cloves garlic, diced
  • ¼ cup red onion, diced
  • ¼  apple, diced
  • 2 tablespoons cilantro
  • 1 egg
  • ½ cup of instant oats or dry panko bread crumbs
  • ½ tablespoon chili powder
  • 1 tablespoon lime juice 
  • 2 tablespoons olive oil

 

Directions

1. In a large bowl, shred the salmon with a fork to separate the meat.

2. Add the beans, garlic, red onion, apple, cilantro, egg, oats/bread crumbs, and mix well. You can mix with a spoon or get active and use your hands!

3. From the mixture, form medium-sized cakes with your hands and lay them out on a plate.

4. Heat a large frying pan on the stove and add the olive oil to the pan.

5. Using medium heat, sauté the salmon and black bean cakes for 3 minutes on each side or until golden. Cover the pan while heating to better cook the insides.

6. Serve while hot. Enjoy!

 

Add your favorite grains and vegetables to make it an easy meal. Or serve on buns to make sandwiches. Unused mixture can be refrigerated and cooked on another day.
